I am wondering if this theme offers having all posts available on one page to click through: this is an example of a website : https://wellnessmama.com/category/health/ that has the same layout I am wondering about. Is this possible?
I found a way to do it as well. If you go to your dashboard and go into menus replace your pages with categories. That's how I did it and it seemed to work.
I just noticed that when I go to my website and click on the category the http://wholefullybeautiful.com/category/health/ ''category'' part is in my URL. Is there a way to take out the ''category'' part. I checked the categories page and there is no editing modification place to get rid of it. Any idea?

It's category page - and you can add any category you want to your menu from Appearance > Menus > "Categories" tab on the left side.

If you want to remove 'category' word on the link, you can use Yoast SEO to do that. Check this image
And if you don't see this tab, check more about Yoast SEO here
But, when you do that, maybe you will get 404 issues for some pages has same slug.
Example:
You have a page called 'Health' before, the link for this page is: http://wholefullybeautiful.com/health/
Now, when you remove category on the category link: http://wholefullybeautiful.com/category/health/ the link will change to http://wholefullybeautiful.com/health/ and has same url with the page 'Health' => this make this category go to 404 page.
