    Hi there,

    How can I create a page of posts from one category, with thumbnails/small images and excerpts. See attached for a visual. Thanks

    Hi,

    You can create categories, add the posts to that categories. 

    You can check this image to see category page of a category page.

    Also, you can change layout for category page via Customize > General Options > Category, Tags, Search, Archive Layout.

    Hi,

    By default, the excerpt will auto appears based on your content.

    Do you don't have excerpt on the posts? If you don't have excerpt, let's show me your site url to I can take it a look.
