1) I am not able to set the number of post to be displayed in the galleries. In the home page, you will see 9 posts. How do I set it to 8 or 10, so that there are no empty spaces in the last row?
2) In the Category listing (http://shahzadidevje.com/category/recipes/) the featured post shows the categories in a "red-ish" color. I tried to set it to white in the "Appearance -> Customize", but its not working when I save and look at the live site. See attached screenshots
1/ Please try change it via Customize > Homepage Options > Custom Amount of Posts Shown Per Page on Homepage
2/ Please go to Customize > Colors for Other Post Layouts > Categories Post Color For Overlay Layout > change it to another color and change it again to white color and save it.

See http://shahzadidevje.com/category/blog/ has 1 featured post and 9 posts in the grid. I would like to set it to 8 post.
The same is for any recipe listing page.

We've said about that issues in thedocumentation for Soledad theme here - seem you didn't check it.
You can change it via admin page > Settings > Reading > Blog pages show at most
