If this can't get achieved, that's fine, but I want to change my layout on the mobile and keep the one I have now on the desktop (so there would be 2 different layouts, a desktop version and a mobile version).

But for now this theme doesn't support this feature, so you can't do that. We will consider to add more this feature in the future updates.
