For your case, this issue caused by you did set a width for your logo is too wide => that makes your logo scale. Please go to Customize > Logo and Header Options > change the width for your logo to "96" and change logo padding top to 2px.
That will make your logo center in the navigation.
that definitely did it. you are a wizard :) . Now that is center I noticed that the logo font size is smaller than the menu font so it makes it look off, so im preety much back to my first question. Is there an easy way to increase header height by 20px so the logo has more space?

Hi,
Yeah, you can check option for it via Customize > Logo and Header Options > Custom Main Nav Height( minimum height 35px )
And note that, when you change the navigation height, you should change the width for your logo also to make it better

Nice! ok so increased it to 85 pixels to match another website i'm using as an example. what formula do you use to calculate the size of the logo?
for example I'm trying to increase it from 135 pixel but only the width increases so the logo looses proportionality

1/ Add more this code to Customize > Custom CSS:
.site-header.header--s10 .custom-logo, .site-header.header--s1 .custom-logo, .site-header.header--s5 .custom-logo{ max-height: 100%; }
2/ And change the width for your logo to 161px
