I attempted to update my version of soledad (simple version) and all of my formatting, including header, menu, colors and sidebar were lost. I had been using the child theme previously and luckily still have this theme on wordpress with most of my formatting. However, how do I get my formatting to transfer to the updated version. My site is not live yet.
If you're using child theme - after updated the parent theme, you need to active again your child theme - your child theme doesn't need to update. It will inherit the parent theme
I did reactivate the child theme but I am missing my top menu and multiple widgets including the about me widget. How do I get these back? Or do I have to basically redo certain sections of my site for every update?
1/ You can go to Appearance > Menus > and make sure you selected "Primary Menu" for your main menu.
2/ For widgets, please go to Appearance > Widgets > scroll down on the bottom, where it say "Inactive Widgets" > drag & drop widgets back to your main sidebar.

There is no way to redo that from the theme.
