If I change and install this soledad from pennews-liftstyle, do I have to make all new pages and posts? I saw some dates transfer to new theme. What do you think?

Let's buy a license of Soledad for your site and install the theme ( don't active it ). When you done, let us know and we will help you change to Soledad.

If you import 2 demos - it will be mixed and you will can't use it.
You can keep use a demo and config other things you want to look like another demos

With Soledad theme, you can config your site without use Homepage, you can config everything like on the demo by use Customizer Wordpress.
You can change layout for your homepage via Appearance > Customize > General Options > Homepage Layout
You can create featured video on your homepage via Appearance > Customize > Featured Video Background Options.
