I'd like to find out how I can control the social media in the footer of the portfolio pages. Such as delete some and add some, or entirely disable them. thank you
In the "Customize Social Media" it says: "Enter full your social link ( include http:// or https:// on your link ), Icons will not show if left blank. " They are left blank, but still show up. Not on the pages, but Portfolio pages. Thanks for your help

Do you mean social sharing or social media icon?
If social sharing, please check options for it via Customize > General Options
For social media icons, please check options for it via Customize > Social Media Options

In the Social Media Options, I have all of my social media empty - no URLS, but it show on all of my portfolio pages.

The guide can apply for your version 3.1 - so, let's do following that guide.
If you do using child theme, let's update parent theme only. After updated parent theme - let's activate again the child theme
