1. If I want to change the name of a category do I need to un-link my blog posts from this category first and will it then change it via posts - categories or is there another way to change it?
2. Second question unrelated - how can I center my widgets in the sidebar as at the moment they are off to the left?

1/ Just need go to Posts > Categories > edit category you want to change the name and update it. All posts inside that category will keep.
2/ Please try add more this code to Customize > Custom CSS to do that:
