I want to add a logo on to the top of the screen on the mobile view - as it's only seen when you click on the menu tab. Is there an option to add it on top of the header banner?

You can use Header Style 2 or 5 or 8 to do that.
Change header style via Customize > Logo and Header Options > Header Layout.

I want the logo in the middle for the main desktop site though - would it still remain there or move?
