1/ Have you enable showing modified date replace with published date via Customize > General Options > Display Modified Date Replace with Published Date ?
2/ It related with your SEO configBecause the AMP will inherit the SEO from non-AMP version.
Note: Please make sure you're using latest version of AMP plugin - version 3.1
I sent you this ticket of course I had done everything I could. But this could be the theme coding problem.
So Yes I had enable Replace with Published Date.
2. That the problem, I had show you on the screenshot. The replace only work on non-amp version. for amp version not showing the correct modified date.
I found that the amp date show not correct the updated date. Also on google search result not showing date for amp.

I found that problem is, everything look good. desktop search http://prnt.sc/rbk438 ,non-amp http://prnt.sc/rbk7n0 , mobile search http://prnt.sc/rbk8gy
But when I jump in to AMP page. the date show published date http://prnt.sc/rbk6t6 not the updated date.

Ahh, ok I understand it now
Currently AMP version doesn't support for display modified date.
We will consider to add more this feature in the next update version of AMP
