1-Another question: Where do I go to limit the amount of posts shown on the home page? I want to show 6 posts, with a 'load more' button, and it's now showing ALL of my posts.

And you're using WAY2 - config homepage by use Customize - so there is no any "Home" in Pages section.
If you want to get a page "Home" in pages section, please use WAY 1 or WAY 3 ( Recommend WAY 1 ) by use Elementor to config your homepage
2/ If you're using Customize to config your homepage. You can check options for it via Customize > Homepage Options > Custom Amount of Posts Shown Per Page on Homepage
If you're usign Elementor, you can check option for it on "Query" section from element "Soledad Latest Posts" inside Elementor.

1/ If you're using Customize to config your homepage, you can check option for it via Customize > Other Layouts Options.
2/ Yeah, add it via Customize > Footer Options > Google Analytics Code - It will track analytics on all the pages
