1/ About activate WPBakery page builder, we've said about this here
2/ For change the text on topbar, check option for it via Customize > Topbar Options.
For change the text on your content - let's edit your homepage by use WPBakery Page Builder and change it there.
You should check documentation for this theme here to know how to config this theme first.
