2/ Unfortunately, this theme doesn't support for infinite scroll for featured categories on the homepage.
3/ To do that, please do following steps:
a) Go to Customize > General Options > and un-check on "Enable Left Sidebar on Homepage" ( because as I see you're using left sidebar on the homepage )
b) Go to Appearance > Widgets > drag & drop widget "Soledad About Me" to "Main Sidebar" and config it.
And maybe you can check this guide to know how to get URL of an image you've upload to get URL of about me image.

1. For the About Me section, on the right sidebar like in the demo page. I have followed the instructions below and it didn't seem to work. Is there something I've missed?
2. Am I able to Customize the homepage using Elementor if I have already customized it using the other technique --> "WAY 2: Config Homepage Magazine by use Customize:" (from http://soledad.pencidesign.com/soledad-document/)
When I tried to use elementor to customize a page it didn't have the same options as given in the video tutorial.
3. Is it possible to have a portfolio within a portfolio? Like say having a Photo Gallery, then having a few options like Travel, Commercial, Lifestyle and then you click on one of them and, for example under travel would list a bunch of countries. Or Commercial would list a set of brands..
4. Is there a way to Remote the image option for a specific category. I want my 'ideas' section to be without pictures and focused on the writing. But not having a blank picture to represent the blog post.
5. Is there instructions on setting up a page where it might have links to more pages within that page. For example a travel guides page, where it links to a specific country, where you can click into a range of hyper specific travel guides within that country. Kind of like how folders work on the computer.

a) Go to Posts > Categories > edit category "Ideas" > scroll down and on "Select Layout for This Category" > select "Standard Posts"
b) Go to Customize > Standard & Classic Layouts Options > check to "Hide Post Thumbnail" and "Auto Render Post Excerpt"
When you do that, you can set featured images for each posts on this category normal - but this category page won't show the featured images. Because you still need featured images to display on other places like on the menu, latest posts, related posts...etc..
5/ With this requirements, you need to create that page for yourself because only you know what's URLs you want to use inside that page.
With the page like that, I think you can use Gutenberg editor from WordPress itself with "Lists" inside it.
Because you're using Customize to config the homepage, so you can enable sidebar for homepage via Customize > General Options > and check to "Enable Sidebar for Homepage"
2/ This theme is a powerful WordPress theme - it supports 3 ways to setup the homepage. You can check here and you're using WAY 2 - so, there is no homepage listed on Pages > All Pages.

I'm looking to set up my website similar to the demo websites for the Soledad theme.
I have a few questions:
- I would like to have the portfolio similar to what there is on the youtube video example.
- I would also like to have different blog categories having infinite scroll once you enter the page.
- I'm having trouble setting up the about me section on the right sidebar for my website
- I am wondering if there are any other youtube videos or instructional information for setting up the theme

1/ You can check this video tutorial to know how to setup a portfolio.
Note: You're doing wrong - you need to put portfolio shortcode inside a page - not inside a project.
When you edit a page, you can use Classic block - check this image

2/ Have you do following this guide ? If yes, can you tell me what's the options doesn't the same as the video tutorial ?
3/ No - You can't. I recommend you use "Gallery" inside portfolio to get it display other images.

Thanks for the help so far :)
1 - I have followed these instructions but it hasn't seemed to show up on the homepage yet.
2 - When I create a new homepage. Click on elementor. Search for "Penci Featured Slider" nothing shows up.
I have already seem to have a homepage. But it doesn't show up on the wordpress dashboard under pages.
3 - Is it possible to have more than 1 gallery on my website? On a separate page?
