Someone in support here was kind enough to install a particular Soledad theme for me last week - thank you!
I am trying to edit my home page in elementor and as you can see from the screen shot I've attached, I have my header photo from the website up, but there's all that stuff in the bar above (OOTD, Style, etc.) and the theme header "Soledad Fashion" that is part of the theme but has nothing to do with my business.
I have tried and tried, but I can't seem to either get rid of or change that stuff. I want the "Soledad Fashion" part completely gone with just my header image being there instead. (And how do I get my header image to be larger?)
And the header bar across the top - I'd like to be able to edit that so that it doesn't say "Style" or "OOTD" but things that pertain to my business. How do I do that?

1/ The "Soledad Fashion" on the top is logo and it's an image. You can replace it to your logo via Appearance > Customize > Logo and Header Options > "Upload Logo" and "Logo for Vertical Mobile Nav"
2/ To get your header image larger - the easy solution is use larger image than image you're using there.
3/ For the "Style" or "OOTD" at the menu - It based on your settings from the menu.
Please go to Appearance > Menus > click and remove the menu item as you want - check this image: http://prntscr.com/uxvfy5
And I think you should check this video tutorial to know how to use menu inside WordPress.
Thank you! That was all VERY helpful! I went in and worked with everything you just showed me.
The problem is that while I fixed everything just the way I wanted it in "Appearance/Logo and Header Options" and saved it as a draft, when I go in and try to edit the main page, none of the changes show in "preview" or "edit."
I don't understand how to make my changes in "Appearance//Logo and Header Options" actually appear on the homepage.
(The changes you showed me how to make in "Appearance/Menu" work perfectly, thank you! And your information for how and where to make the changes to my logo image, etc. were also exactly what I needed!)
Oh! So I need to get everything else in order behind the scenes, then when I'm ready to publish, I can go in and make those changes in "Appearance" and hit "publish" and the website will then go live - with those changes made?

You need to change it to Publish from customize - because the draft save on Customize can't be preview without customize

Yes. But, I think you can publish settings from Customize now.
And if you want to get your site display on "Maintain Mode" or "Under Construction Mode" - you can use this plugin to create that:

And when your site is ready, you can disable the "Maintain Mode" or deactivate that plugin - and your site will go live.
