I just checked this category:

And after viewsource of this category - I didn't see any other title tag inside the HTML - check this image:

There is only one title tag on that category page.

When you install AMP, the AMP will be send validate AMP pages for Google and Google will index it to make that pages validate as AMP pages.
And when you disable AMP, you need to wait google update it to remove it also.
