I have followed the instructions that you sent me (very clear and easy to understand, thank you) but I still have the same problems: I cannot insert images in the body of text, nor change the type of post (video, link, etc ... )
Have you make sure you've updated the plugins after updated the theme via Appearance > Install Plugins - like image below?
If not, let do that and try it again.
If you did it and the issue still appears, Please try to deactivate all plugins ( except plugins come from the theme ) and try it again. If it works, let's enable each plugin to check what's plugin caused this issue.
have disabled the pluggin that gave an error, and when updating the "Soledad" template, I have also updated the "Elementor" pluggin (I was working with an older version because the last one gave me an error). Now "Elementor" gives me problems again. Should I go back to the previous version of "Elementor"?
No - the theme works fine with latest version of Elementor plugin. If you have problems with latest version of Elementor - let's check again with the plugins.

As I see you're using Soledad version 7.3.2, so please update the theme to latest version - version 7.5.1
Because you're using Soledad version 7.3.2, so please remove the code at the end of functions.php file like on this image: http://prntscr.com/uon4qx
After that, do following this guide to get auto-updates the theme: https://pencidesign.ticksy.com/article/15633/
Note: Make sure you did all 4 steps on the guide ( remember do step 4 after updated the theme )
When you done, check it again.

This issue caused by you didn't update the theme to latest version... You still keep use old version.
I just updated the theme to latest version and update the plugins come with latest version to help you.
Now, everything working fine.
