At this moment, the theme doesn't support to override the files inside /inc/js_composer/shortcodes
If you want to get it works now, let's edit the file in the parent theme. And we will add more an option to help you can show the categories on the slider style 27 in the next update version of Soledad.
Can you tell me more about change the links for each element? Do you mean about change link for each post on the slider? If right, you can use plugin Page Links To to custom permalink for each post.
