Hi,
All your issues caused by plugin WP Rocket. It auto renders the codes makes the AMP can't be validated.
As I knew, WP Rocket plugin doesn't support for AMP at this moment.

Strange, I didn't get issues like that from my-end.
So, please try go to Plugins > All Plugins > deactivate & delete plugin "Penci Shortcodes & Performance"
After that, go to Appearance > Install Plugins > and re-install & activate this plugin.
And try it again.
