Yeah, in most of all the layouts, we need to resize/crop the images to make sure it got a smaller size to display well on your site.
Example: If a customer uploads an image with size: 20 MB - with the width/height is: 10000x7000 pixel, we can't display this origin image on the site, right? Because it will take too many time to loads an image like that.
Also, if you open an origin image and resize it to fit with the container of the image, you can see it look the same - here is an example when I compare it: http://prntscr.com/xao02n - It looks the same.

I'm trying to create a portfolio using the portfolio section on the theme.
I want to create it using Elementor but this option does't show up like in Pages and Posts?
Is this normal? Should I create the Portfolio as a Page and add the Penci Portfolio widget instead?

Update: I change the style of Single post to 7 and that fits the full image.

Yes I understand that but are images are not that big. The actual sizing of the image you showed is 600kb. 1170 × 627
Did you resize the original photo to fit the container? what is the size of the container?
For me the original and the preview do not look the same the feature image unless click looks significantly blurrry.
