When someone on mobile or tablet > access google and search a keyword > the search results appears > if your site support AMP and appears on search results > AMP pages will loads.
It's different with the mobile interface when you access directly to your site URL on mobile.
If you want to make AMP pages auto appears when access to your site on mobile, you can go to Appearance > Customizer AMP ( NOT Customize ) > Advanced Settings > and check to "Show AMP for mobile visitors"
2/ We've said about this at the top of the documentation for the Soledad theme here - on the "red" text. Please take a look.
We still keep updating the theme, based on what's the new features - it can be range from 10 days -> 2 months for a new update.
