2. In soledad settings, how should I mark "Remove all default google fonts - load default fonts from located hosting" and "Remove all default fonts loads by the theme from located hosting". What does that mean?

2. All the settings of Complianz don't affect to Soledad GDPR, so you can remove/save it if you want.

1. Yes. We'll consider adding this option in the future theme update,
2. This option will remove all the Google Fonts loading from Google Server, download them and load it from your site.
Remove all default fonts loads by the theme from located hosting: this option will load the default system font.
