Unfortunately, we find editing the start page with Elemenotor somewhat complicated. During editing, we got the impression that we were not in control of the situation. Some things appear spontaneously without being wanted. See example (screen schot).
How can we get this back to the initial situation?

We realised that we cannot delete the category with the name "uncategorised". All others can be removed.
How can we solve the problem?

You can't remove the uncategorized category, this is a default category of WordPress. You can rename it only.

This is a heading title area of the Elementor element, you can edit/remove it like the screenshot below:
