All WooCommerce options in the Soledad theme can be found under Appearance → Customize → WooCommerce. To customize the product page, navigate to the Shop Settings section.
Unfortunately, the current version of Soledad does not support advanced customization of the WooCommerce category layout similar to post categories or taxonomies.
