Regarding the admin-ajax.php calls on your site, I can confirm they are coming from one of your installed plugins. The Soledad theme does not trigger any admin-ajax.php requests without user interaction, so please check the settings of all installed plugins and then test again.
I can confirm that this issue is not related to the AJAX Mega Menu.
If you want to disable the AJAX Mega Menu, please go to Appearance → Customize → Logo & Header → Category Mega Menu and turn off the “Use AJAX Loading for Category Mega Menus” option.

Hosting support claims that the issue is caused by Penci Mega Menu. The screenshot shows what Query Monitor is displaying.
